This is the best broccoli bacon cheddar cheese salad you’ll ever make and taste – I assure you. Not only will you enjoy the perfect mix of ingredients but this dish is sure to please everyone. Make sure to read my story about the last time I served this great salad below…
Broccoli Bacon Cheddar Cheese Salad Ingredients
2 heads fresh broccoli chopped up
1 package of bacon (use scissors to cut the bacon up into strips)
1 1/2 cups (or 1/2 a big block) of sharp Cheddar cheese, shredded
1/2 large red onion chopped
1/4 cup (60ml) red wine vinegar
1/8 cup (25g) white sugar
2 teaspoons (10g) ground black pepper
1 teaspoon (5g) salt
2/3 cup (150ml) mayonnaise
1 teaspoon fresh lemon juice
Broccoli Bacon Cheddar Cheese Salad Directions
1. Fry the bacon so it’s crispy and drain on some paper towel and let it cool down.
2. In a large bowl combine broccoli, cheese, bacon and onion.
3. Then prepare the dressing in a smaller bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice.
4. Combine dressing with salad. Cover, and refrigerate until ready to serve.
The story behind the Salad
Much to my disbelief, finding Broccoli in Greece can be quite a feat. I’ve given up on getting celery, parsnips and anything slightly exotic. But how can broccoli be hard to get?! Well…it is.
That being said, when I find a broccoli I want to make the most of it. The last thing I want to do is create a broccoli dish and find left-overs.
With this broccoli bacon Cheddar cheese salad I promise you that there will never be left-overs AND everyone eating it will request the recipe.
Kids and adults alike will gobble up this absolutely divine salad.
We’re having guests tonight – yikes, what can I make?!
While sailing to Sivota Bay on the island of Lefkas in the Greek Ionian, we received word that our dear friends would meet us there. Last year, we met the family from sailboat, ‘Why Knot,’ a 44′ Catamaran and fell in love with all of them. My five year old, Sienna, met an older Sienna (now age 10) and her sister Tanna (age 12). And we met the parents – Garth and Elaine.
When we met ‘Why Knot’ in the Aegean last year we spent around three weeks with the family, going from island to island, enjoying each other’s company. The girls had sleep-overs, we went horseback riding, some days hubby and I had the boat to ourselves and other days we were full of giggling girls.
Fortunate for us, ‘Why Knot’ decided to sail all the way from their base in Turkey over to the Ionian Sea and we were able to push back our plans to head west.
Our reunion was an excellent one – good friends, a beautiful bay, great food and lovely conversation
Before we arrived in Sivota Bay, I made the broccoli salad as we sailed along. This is the view I had out the salon window…
And while I was making the broccoli bacon Cheddar cheese salad, my husband, Simon worked with our daughter, Sienna, on her ABC’s and Math. Especially when the seas are calm, we spend around one to two hours a day homeschooling our daughter. She learns all the time, but we set aside specific time to work on handwriting, learning the alphabet, early reading skills and working with numbers.
How many kids get an education while sailing around the Ionian Sea?
I’m sure Sienna has no idea just how lucky she is.
Finally, the salad was ready. I had Simon take a picture of my masterpiece and looked forward to the comments I’d receive later that evening. Sure enough, everyone on the boat – kids and adults – commented on the salad saying it was the best broccoli salad they’ve ever eaten.
Fortunate for my friends, I purchased Cheddar cheese in Malta. Finding Cheddar in Greece is similar to finding celery 🙁
That being noted, if you can get yourself some broccoli and some Cheddar cheese, the rest of the ingredients are fairly basic. Give this salad a go and enjoy the great feedback you’ll get from your friends and family.
