Solar Cooker Sweet Potato Bean Tacos

For our very first attempt at understanding the benefits of solar cooking, we made solar cooker sweet potato bean tacos. None of us aboard Britican are vegetarians but the idea of cooking meat with the sun didn’t appeal to us (at first). I wanted to test our cooker with something that seemed easy and only had veggies.

Furthermore, I needed to make sure I could readily find the ingredients. Being anchored in Bermuda at the time, some 800 miles west of America’s east coast, it wasn’t possible to get all the veggies we were accustomed to getting.

As shown in the video below the recipe couldn’t be easier.

I threw all the ingredients into one of the two pots supplied with the solar cooker, popped it into the cooker and then left it there all day. The recipe noted that the food would be done in three hours but we left it for around five. Based on my experience of now cooking over 16 solar cooked recipes it’s best to just get the food in the cooker before noon and then around 5pm – 6pm, when you’re ready to eat, it’s done.

Solar Cooker Sweet Potato Black Bean Tacos Recipe

  • 2 Tbsp chili powder
  • 2 Tsp dried oregano
  • 1 1/2 Tsp ground cumin
  • 1 Tsp salt
  • 1 large sweet potato, peeled and diced
  • 1 can of black beans 15 oz
  • 4 garlic cloves, minced
  • 1 medium onion, thinkly sliced
  • 1 jalapeno pepper, minced
  • 1 green pepper, chopped
  • 1 cup of frozen corn or 1 cup of canned corn
  • For serving: tortillas, salsa, cheese, sour cream, etc.

Directions

Place all the ingredients in the pot and stir. Put the pot in the solar cooker and cook for at least three hours or until the sweet potatoes are tender.

    SOLAR cooking so basic & effective most of all free! Whats next compost gardening!

      I actually did look into composting but there’s only so much you can do on a boat 😉
